Blow my mind Banana Cookies

Found this recipe on Pintrest and altered it slightly according to what I had in my kitchen. I was doubtful these cookies would turn out - and you'll see why by the ingredients. Surprise! They are amazing.


Ingredients -

3 large old bananas (2 were fresh but soft, one was frozen that I thawed)
4 pouches of regular instant oatmeal (equivalent of about 1 cup of oats plus a dash)
1/2 cup toasted coconut shavings
1/2 cup chocolate chips


Yes. That's it!!

Mash the bananas slightly before adding oats, coconut and chocolate chips. Once all ingredients are in the bowl, mash around quite a bit until you get a consistent texture. I used a tablespoon to drop mounds of the mixture onto an ungreased cookie sheet (keep in mind it is a pretty new sheet, so maybe if yours is old, you should use parchment paper). I made pretty big dollops and got 10 cookies that I baked for exactly 15 minutes at 375 degrees.

Wheat free, dairy free if you remove chocolate chips, no added sugar, extremely low fat - and they are freaking delicious!
